Ingredients
  

  • 2 1/2 lbs. red potatoes 5 large, cut cubes just over 1/2-inch
  • 1/3 cup olive oil
  • 1 tsp salt then more to taste
  • 1 tsp freshly ground black pepper.
  • 3/4 tsp garlic powder
  • 3/4 tsp paprika
  • 1/2 tsp onion powder

Instructions
 

  • Heat the oven up to 450 degrees. Apply nonstick cooking spray to an 18 by 13-inch baking sheet that has a rim.
  • Make a mound of potatoes in the middle of the baking sheet. Pour some olive oil over it.
  • Add onion powder, paprika, garlic powder, and salt & pepper to potatoes. Toss thoroughly to coat in oil and spices equally.
  • Evenly distribute the potatoes onto a single layer. Bake for 15 minutes in the center of a preheated oven.
  • Take out of the oven, toss, and bake for a further fifteen minutes or so, or until just tender.
  • Adjust oven rack to be about 5 inches away from broiler.
  • Potatoes can be slightly browned in 2 to 3 minutes under the broiler (watch them carefully and don’t leave them alone; they color quickly!).
  • After removing and tossing, broil for a further minute or two, or until golden brown and crisp on the other side. Warm up and serve.

Notes

Storage: Any leftover potatoes can be kept in the refrigerator for up to four or five days in an airtight container.
Freezing: Arrange the potatoes in a single layer on a baking sheet and freeze for two hours, or until they become hard. Spoon into a freezer bag and freeze for up to 3 months. Thaw in the refrigerator for a full night before heating.
Reheating: Although you can reheat it in the microwave, the lovely crispy edges will be lost. You’ll need to reheat the potatoes in the oven for that. Transfer the remaining potatoes to a baking sheet and bake at 400°F for approximately 10 minutes, or until they are well heated. It also works to reheat in a hot saucepan with a small amount of oil.
