Why Do You Blanch Broccoli for Salad?
Because no one likes to eat ugly broccoli, the little cooking period brings out the natural hues in the fruit or vegetable before they may turn a disagreeable tint. The vegetable keeps its brilliant color because the cooking process is stopped, deactivating the enzymes that change color.
How Long Should Broccoli Be Boiled?
Place the florets in a pan of boiling water and cook for 6 to 8 minutes to bring them to a boil. Place over boiling water in a steamer and cook for 6 to 8 minutes to steam. Separate the broccoli into bite-sized florets for stir-frying. Heat 1 tablespoon of oil in a frying pan, add the florets, and cook for 4–5 minutes, or until cooked.
