Broccoli Tortellini Salad Recipe

Ingredients
- 1 pound Cheese-filled tortellini pasta about 450g
- 3 cups Fresh broccoli florets about 300g
- 1/4 cup Extra virgin olive oil
- 2 cloves Garlic minced
- 1/4 cup Sundried tomatoes chopped
- Salt and pepper to taste
Instructions
- Boil water in a big pot.
- Put the tortellini pasta in and cook it until it’s soft but still a bit firm.
- Drain the cooked pasta in a colander and leave it to the side.
- While the pasta cooks, steam the broccoli until it’s soft but still a little crunchy.
- Once the broccoli is done, take it out and let it cool down a bit.
- Mix together some extra virgin olive oil, minced garlic, chopped sundried tomatoes, salt, and pepper in a bowl to make the dressing.
- Put the cooked tortellini and steamed broccoli in a big bowl.
- Pour the dressing over them and gently mix everything together.
- You can serve the Broccoli Tortellini Salad warm or at room temperature.
