This is our best Caesar pasta salad! It’s made with my special Greek yoghurt Caesar dressing, and it’s really easy to make. You can have it as a starter salad, a side dish, or even as a main dish with chicken, steak, seafood, or chickpeas. It’s packed with flavour and simple to prepare!

This salad has homemade Caesar dressing, fresh romaine lettuce, crunchy croutons, grated Parmesan cheese, and rotini pasta. It’s perfect for spring and summer, and everyone loves it! You can also toss in some diced chicken, avocado, tomatoes, or bacon bits for extra taste and texture.

Ingredients
- 1 pound Pasta
Caesar Dressing:
- 1/2 cup Mayonnaise
- 2 tbsp Lemon juice
- 1/4 cup Olive oil
- 1 tbsp Dijon mustard
- 2 cloves Garlic minced
- Salt and pepper to taste
- 1 head of Lettuce like romaine lettuce, chopped
- Cherry tomatoes
Instructions
- First, boil water in a big pot.
- Then, cook the pasta until it’s just right, like how you like it.
- Drain the pasta in a big strainer and let it cool a bit.
- In a big bowl, mix together mayonnaise, lemon juice, olive oil, mustard, garlic, salt, and pepper to make the Caesar dressing.
- Put the cooked pasta into the bowl with the dressing.
- Mix everything together until the pasta is all coated with the dressing.
- Add chopped lettuce and cherry tomatoes if you like, then mix again.
- Serve and enjoy your delicious Caesar salad pasta!
Notes
- Make ahead Keep the croutons and dressing on the side so everything stays crisp and fresh. The croutons will get soggy if you add them and then serve it later on.
- A homemade Caesar is best, but feel free to use your favourite bottled Caesar in a pinch!
- Feel free to use mayonnaise instead of Greek yoghurt for the dressing. I love the lightened-up flavour and added protein from the Greek yoghurt!

How Many Days Can We Keep This Pasta Salad?
So, if you mix all the ingredients in the pasta salad, it will stay in the fridge for 2 days. But if you want to make it earlier, mix the pasta and the dressing and keep it in the refrigerator in a sealed container.
This way, it can last 3-5 days. Then, when you’re ready to serve, add the other ingredients and mix. You should add a bit more Caesar dressing before serving.
Can I Put Pasta Salad in the Freezer?
While you can freeze the pasta salad with the veggies, freezing the pasta with the creamy Caesar dressing might make it separate when thawed. So, if you need to freeze it, just mix the pasta with the chicken, chill it, and then freeze it in sealed bags.
But honestly, it’s best to make it fresh because thawed pasta can become a bit watery and change the taste. If you freeze it, let the pasta drain for about an hour after thawing to get rid of any extra water before mixing it with the dressing and other stuff.
How Can I Make Caesar Dressing at Home?
Making your own Caesar dressing is simple! Just mix mayonnaise, lemon juice, mustard, crushed garlic, anchovies (if you like), Worcestershire sauce, grated Parmigiano Reggiano cheese, a pinch of salt, and some pepper in a bowl. Use a whisk to stir it until it’s smooth.
Taste it to make sure you like the flavour, and adjust if needed. Then, you can use it right away or keep it in the fridge for later. Just stir it before using it again. Easy peasy homemade Caesar dressing!
