  • 6 Mini Cucumbers or 1 long English cucumber
  • ½ cup Red onion thinly sliced or diced
  • 2 tbsp Olive oil
  • 1 tbsp Red wine vinegar
  • 1 tbsp Fresh Lemon juice

  • 1 tbsp Fresh parsley
  • ¼ tsp Salt adjust to taste
  • tsp Black pepper
  • 2 Ounces crumbled Feta cheese

  • Slice the cucumbers about ¼ inch thick. If you’re using an English cucumber, cut it into quarters.
  • Add cucumbers and sliced onion to the bowl and mix them with the dressing. Chill in the fridge for at least 30 minutes or up to 4 hours.
