Easter Pancakes Recipe
Equipment
- Large mixing bowl
- Whisk
- Skillet
- Ladle
- Spatula
- Knife
Ingredients
- 1½ cups all purpose flour
- 1 tbsp baking powder
- 2 tbsp granulated sugar
- 1 tsp vanilla extract
- 1 egg
- 1½ cups milk
- 3 tbsp unsalted butter melted
- For the toppings:
- 2 banana slices
- 6 mini chocolate chips
- Reddi-wip whipped cream
Instructions
- In a big basin, mix together all the ingredients for pancakes. Stir until a smooth consistency is achieved.
- Over low to medium heat, place the skillet on the burner.
- Using a ladle, transfer batter onto the skillet to form 1/2 long triangle, 1/2 medium circle, 1/2 tiny circle, and 1 large circle. Stir and cook for about 2 to 3 minutes, or until bubbling and brown on top.
- Using a spatula, turn and cook for a further minute or until golden brown.
- On your plate, start by placing the triangles. Make sure the points on top of them make contact with the plate’s top.
- Transfer the medium circle over the bottom of the triangles, covering about ¼ inch of the triangles. Line up the large and medium circles such that the large circle covers ¼ inch of the medium circle.
- Arrange the two small circles so that they are a ¼ inch and two inches apart from the largest circle by placing them on top of it.
- Make sure that the largest circle between the two small circles has a dollop of whipped cream on it. In the middle of each small circle, place a piece of banana.
- On each of the small circles, place three mini chocolate chips beneath a slice of banana. Serve & enjoy!
Notes
- Use gel food coloring for vibrant colors without altering the pancake batter’s consistency.
- Adjust the amount of food coloring to achieve the desired shade of each color.
- Cook pancakes on a medium-low heat to prevent burning and ensure even cooking.
- If using a squeeze bottle or piping bag for designs, practice on a separate surface before decorating the pancakes.

What Is the Secret to Fluffy Pancakes?
Yes, in this case, egg whites are THE deciding element. Beat the egg whites only for three minutes on medium speed to give your pancakes that fluffy texture. When they begin to get creamy, it’s time to incorporate them into the pancake batter.
Can I Use Ghee Instead of Oil in Pancakes?
Unsalted butter that has melted is an ideal replacement for oil and can even enhance the taste of baked goods. Replace oil with butter in a 1:1 ratio, melting butter over the stove or in the microwave. In this case, vegan butter or ghee will also work.
