Notes
- Cottage Cheese: Low-fat cottage cheese contains excessive moisture and will interfere with its ability to firm up correctly.
- Steam: Their smooth, custardy texture comes from the steam created when the pan of water is placed inside the preheating oven.
- Additional Variations: Dill and smoked salmon, sun-dried tomato and olive, cheddar and bacon crumbles, canned green chiles, cilantro, and pepper jack.

How Long Are Homemade Egg Bites Good For?
Homemade egg bites can be stored in the refrigerator for up to 5 days. It’s best to store them in an airtight container to maintain freshness. They can also be frozen for longer storage, up to one month. Simply thaw them overnight in the refrigerator or reheat them in the microwave for a quick and easy meal or snack.
How Do You Keep Eggs Fluffy?
To keep eggs fluffy, whisk them vigorously before cooking to incorporate air. Use a nonstick pan and cook over low to medium heat, stirring gently and continuously. Avoid overcooking, as this can cause eggs to become dry and dense. Adding a splash of milk or cream can also help maintain fluffiness.
