  • 1 Large pot
  • 1 Cutting Board

  • 1 Mixing spoon
  • 1 Serving bowl

Ingredients
  

  • 8-10 Yukon Gold Potatoes cut into wedges
  • 1 lemon juiced
  • 1/3 cup olive oil
  • 4-6 garlic cloves
  • 2 tbsp dried oregano
  • 1 tbsp paprika
  • salt & pepper
  • fresh thyme to garnish

Instructions
 

  • Soak the chopped potatoes for fifteen minutes in cold water.
  • Adjust the oven’s fan to 400 degrees Fahrenheit.
  • After draining, pat dry with a towel.
  • Combine potatoes with all the ingredients, excluding water, in a bowl and well combine.
  • Transfer potatoes to a pan and add the remaining olive oil from the bowl.
  • Pour some warm water into the pan’s corner, turning it to ensure the water covers the entire surface. The liquids should reach halfway up. The olive oil will be washed out if you pour the water straight on top of the potatoes.

  • Roast until the liquids begin to boil, about 10 minutes. After about 45 minutes, lower the heat to 320 degrees Fahrenheit and continue roasting.
  • Using a fork, check to see if the potatoes are tender but not falling apart.
  • If preferred, top with oregano and lemon wedges before serving.

Notes

  • You can finish the potatoes under the broiler if you’d like to give them a little more color and browning.
  • Just watch them carefully to make sure they don’t burn!
  • Use kosher salt in its place if you don’t have any seasoned salt on hand.
