  • 1 Deep Nonstick Fry Pan
  • 1 Spatula
  • 1 Butter knife

Ingredients
  

  • 4 slices white bread or sour dough
  • 1/8 teaspoon black pepper or to taste
  • 2 tablespoons mayonnaise
  • 4 ounces cheddar cheese or American cheese
  • 2 tablespoons shredded cheddar optional

Instructions
 

  • Set a small skillet on low heat to preheat.
  • Each slice of bread should have one side covered in mayonnaise. Place the mayonnaise-side down in the skillet.
  • Add slices of cheddar cheese, salt & pepper to taste, then the last piece of bread with the mayonnaise side facing up.

  • Grill for 4–5 minutes, or until browned. Grill the opposite side until golden after flipping.
  • Add the shredded cheddar immediately to the outside of the sandwich just before serving, and grill for an extra minute or two to make it crispy.

Notes

Depending on the size and shape of your bread, you will need to use a different amount of cheese and butter. As a general rule, more is preferable to less.
  • Bread: Any bread will work well for this recipe; just make sure it’s not too thick, too thin, too soft, or too holey since the cheese might not melt. A good sourdough is my favorite, but not the fancy ones with the insanely thick, rough, and tooth-breaking crust. You only need a decent, regular sourdough!
  • Cheese Options: Because mozzarella has a very mild flavor, the greatest grilled cheese is made with a combination of mozzarella and flavored cheese. My favorite cheeses are fine-aged cheddar or gruyere.
