Ingredients
  

  • 2 ½ Cups Cooked and Shredded Chicken
  • 3 Stalks Celery chopped
  • ½ Red Onion finely chopped
  • 1 Cup Grapes cleaned and chopped
  • ¼ Cup Parsley chopped
  • ½ Cup Sliced Almonds
  • ¾ Cup Greek Yogurt
  • 1 tbsp Dijon Mustard
  • Zest and Juice of 1 Lemon
  • 1 tsp Sea Salt
  • 1 tsp Pepper

Instructions
 

  • Wash grapes and soak them in water with baking soda and salt.
  • Cook and shred chicken.
  • Chop celery, onion, grapes, and parsley.
  • Combine chicken, celery, onion, grapes, parsley, and sliced almonds in a bowl.
  • Mix Greek yogurt, Dijon mustard, lemon zest, lemon juice, sea salt, and pepper in another bowl.
  • Add dressing to the chicken mixture and mix well.
  • Taste and adjust seasoning if needed.
