  • 1 cup Cornmeal
  • 1/4 tsp Cajun or Creole seasoning
  • 1/4 tsp Fresh ground black pepper
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1 cup All purpose flour
  • 3 tbsp Grated onion
  • 1 tbsp Sugar
  • 2 tbsp Vegetable oil
  • 1 Egg large
  • 1/2 tsp Salt
  • Oil for frying

  • Whisk together these dry ingredients- Cornmeal, flour, sugar, baking soda, baking powder, Cajun seasoning, salt, b.lack pepper
  • In a separate medium bowl, mix milk and vinegar; let it sit for 5 minutes.Whisk vegetable oil, egg, and onion into the milk mixture.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.Heat 1 1/2 inches of oil in a Dutch oven or heavy skillet to 365 degrees Fahrenheit.
  • Using two small spoons, drop rounded spoonfuls of the batter into the hot oil.
  • Fry for 3-5 minutes or until golden brown, turning occasionally. Remove the hush puppies with a slotted spoon and drain on paper towels.
  • Serve immediately.
