  • Peel or gently rub off the beet skin with ease as it has cooled to the touch or leave it on. Serve it in your preferred dish—a salad, a curry, or anything else.

Notes

  • Choose fresh, firm beets that are free of blemishes for the best results.
  • Trim off the beet greens, leaving about an inch of stem attached, to prevent the beets from bleeding too much color during cooking.
  • Add a cup of water to the Instant Pot before placing the beets on the trivet to create steam and help cook them evenly.
  • Cook the beets on high pressure for about 15-20 minutes, depending on their size. Larger beets may require a longer cooking time.
  • Use the natural release method to allow the beets to finish cooking and retain their vibrant color and nutrients.
  • Once cooked, allow the beets to cool slightly before peeling them. The skins should easily slide off with a gentle rub using your fingers or a paper towel.

What if Beets Are Odd Sizes?

When beets have a uniform thickness, they will cook more evenly. You can cook them together even if you cut the larger ones in half if you have a variety of sizes. I choose the broadest diameter beet in the pot as my base for cooking periods.

What Is the Difference Between Red Beets and Golden Beets?

When you think about beets, the first thing that usually comes to mind is red beets. And they’re colored—you guessed it—red. The color of golden beets is much more yellow and orange.

In addition to having a distinct appearance, golden beets taste less earthy and more mellow than red beets. Beets, whether red or golden, cook at the same temperature and rate. Therefore, this recipe will work for you whether you are cooking red or golden beets in your Instant Pot.
