- 1 ½ cups Flour
- 1 cup Sugar
- ½ tsp Baking soda
- 1 tsp Cinnamon
- 1 tsp Ginger
- ½ tsp Salt
- 2 Eggs
- ¾ cup Vegetable oil
- 1 tsp Vanilla
- 1 cup mashed Bananas about 2-3 bananas
- ½ cup chopped Pecans optional
Instructions
- Preheat your oven to 350°F. Grease a loaf pan with vegetable oil spray.
- In a medium bowl, mix the flour, baking soda, cinnamon, ginger, sugar, and salt. Set aside.
- In a large bowl, mash enough bananas to get 1 cup. Add the vegetable oil, vanilla, and eggs. Whisk until well mixed.
- Slowly add the dry ingredients to the banana mixture. Stir until smooth.
- If you want, stir in the chopped pecans.
- Pour the batter into the greased loaf pan.
- Bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean.
- Take the bread out of the oven and let it cool completely in the pan.
- Once cool, remove the banana bread from the pan, slice it, and enjoy
