  • 1 cup Sugar
  • ½ tsp Baking soda

  • 1 tsp Vanilla
  • 1 cup mashed Bananas about 2-3 bananas
  • ½ cup chopped Pecans optional

Instructions
 

  • Preheat your oven to 350°F. Grease a loaf pan with vegetable oil spray.
  • In a medium bowl, mix the flour, baking soda, cinnamon, ginger, sugar, and salt. Set aside.
  • In a large bowl, mash enough bananas to get 1 cup. Add the vegetable oil, vanilla, and eggs. Whisk until well mixed.
  • Slowly add the dry ingredients to the banana mixture. Stir until smooth.
  • If you want, stir in the chopped pecans.
  • Pour the batter into the greased loaf pan.
  • Bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean.
  • Take the bread out of the oven and let it cool completely in the pan.
  • Once cool, remove the banana bread from the pan, slice it, and enjoy
