  • Preheat your oven to 375°F.
  • Blend the oatmeal into a coarse flour using a blender.
  • Mix the blended oatmeal, flour, salt, baking powder, and baking soda in a medium bowl.
  • Cream the butter and sugars together in an electric mixer with a paddle attachment on medium-high speed until light and fluffy.
  • Beat in the eggs and vanilla until everything is well blended, making sure to scrape down the sides of the bowl as needed.
  • Combine the flour mixture with the butter mixture, mixing just until blended.
  • Stir in the chocolate chips, grated chocolate, and nuts. (Optional: cover the dough and chill for 30 minutes. If you do this, add an extra minute or two to the baking time.)
  • Roll the dough into balls and place them two inches apart on a cookie sheet.
  • Bake for 10 to 12 minutes.
