Ingredients

For the Sauce:

  • ½ cup Soy sauce
  • ¼ cup Brown sugar
  • 2 tbsp Sesame oil
  • 1 tbsp Chili and garlic sauce

For the Noodles:

  • 450 grams Dried noodles
  • 500 grams Pork mince
  • 1 tbsp Peanut oil
  • ¼ cup Peanuts
  • 1 head Broccoli
  • 1 tsp Sesame seeds optional

Instructions

  • In a small bowl or jar, mix together all sauce ingredients and set aside.
  • Bring a large saucepan of water to a boil and cook the noodles according to the packet directions. Chop the broccoli into small bite-sized pieces and add to the pot of noodles just as they are finishing cooking. Cook for another minute until tender. Drain both the noodles and broccoli, then set aside.
  • In a frying pan, heat the peanut oil over medium heat. Cook the pork mince until brown, breaking it up with a wooden spoon.
  • Add the peanuts, broccoli, and noodles to the browned mince and mix through the sauce. Cook for 5 minutes, stirring until the sauce thickens and coats the noodles. Sprinkle over sesame seeds, if using, and serve immediately.

Notes

  • Cook Noodles and Broccoli Together: Add the broccoli to the boiling noodles in the last minute of cooking. This saves time and ensures perfectly tender broccoli.
  • Prep Sauce Ahead: Mix the sauce ingredients in advance and store in a jar. This makes the cooking process quicker and easier when you’re ready to cook.
  • Crisp the Pork: Let the pork mince brown well before adding other ingredients. This adds extra flavor and a nice texture to the dish.

How Should I Store Leftovers?

Store any leftover pork peanut noodles in an airtight container in the refrigerator for up to 3 days. To reheat, microwave or warm in a pan over medium heat until heated. If the noodles seem dry, add a splash of water or extra sauce to moisten them up.

Can I Use a Different Type of Meat?

Yes, you can substitute the pork mince with ground chicken, beef, or turkey. Each type of meat will bring a slightly different flavor to the dish, but all will work well with the sweet and spicy sauce.
